When I download mp3 files for us in iTunes I generally just download the .zip file of the whole show. If you just do the mp3 files you need to control+click on the link and select download to disk. Then just drop them onto your library and they will be added. Most of the mp3 files that are downloaded have the ID3 tag info on them. I use a Mac and an iPod, they all contain my mp3 files that I grab off of here. Make sure you have copy to your library set in your iTunes preferences. That will make sure they are added to your library.

On a mac, the way I listen to most music (at least at first) is via streaming. Unfortunately iTunes is not very clever with m3u files. There is a applescript that makes it work really well, but it takes a minute to install (in fact it is kind of a pain, but really worth it!)

then if I like it, I download it in mp3 format, unzip it, and drag the folder into itunes. then I mark the set of them in my library and then "make a playlist from selection" then you can burn.

not the most intuitive. I hope apple supports open formats well into the future.
